Fujian Dialects - Because of its mountainous terrains, Fujian is well known for its language variations. Major dialect groups include Pu-ian, Eastern Min, Central Min, Southern Min, Northern Min, Shao-Jian and Hakka. In all, there are 23 distinct dialects in the province and their mostly mutually unintelligible.

Ship Building & Seafaring Culture - Fujian has a long ship building history and along with that, overseas migration. Zheng He, the famous eunuch admiral that commanded the Ming naval expedition fleet hailed from Fujian. Because of this seafaring culture, most of the overseas Chinese diaspora were originally from Fujian.

The association of Fujian with tea has been mentioned in many answers. I would like to add one not mentioned. The modern Chinese navy started in Fujian 船政学堂

Foochow Arsenal. The naval academy produced the first generation of navy officers in the Imperial Qing Navy. The alumni also include Zhan Tianyou, the father of Chinese railway, and Yan Fu, the translator/scholar who introduced western thoughts and science into China.
