There's one very clear difference between Chinese and American food: you don't eat the oil you can see in Chinese food.

You must have American Chinese food, and not typical Chinese food.

Chinese believe in balance, if we have too much greasy food today, we will have some bland food the following day.

If we have too much meat today, we will compensate with more vegetables.

I agree some Chinese food can be greasy. But if that’s your impression of all Chinese food, you’ve probably either been ordering the wrong things or going to the wrong restaurants.
