Many street vendors in India do not follow basic hygiene practices like using gloves while handling food. Health departments are unable to or unwilling in some cases to enforce health regulations due to political interference from all political parties. In Kerala, health officials even face violence from hoteliers and street food venders while doing inspections and they call out police for protection! It comes down to the basic reality in the country, namely absence of the rule of law. The current rulers don't care as long as they win elections and get to power.

Use bottled water and never water from anywhere in India for health reason. Even rinsing from Holy Ganges water can be fatal..

I’m from Singapore and I love to experience street food culture when I travel. I’ve been to 35+ countries, including China and India. Both China and India have amazing street food culture and variety. Unfortunately, when I was in Jodphur, Rajasthan, my friends and I ended up with severe stomach issues after eating some delicious street food. I hope the hygiene standards in all countries keep improving in time; so we can all enjoy the incredible street food each country has to offer.

One thing I find it unacceptable is that most Indian street food vendors like to use newspapers or other printed papers to wrap food. Don't they understand that printing ink in those papers is toxc and could contaminate food?

Here in Indonesia we love foods from all over the world. We have Korean restaurant, Japanese restaurant, Chinese restaurant, Vietnamese restaurant etc, but not Indian restaurant. Indian restaurant cannot survive here.

We don't want to try any indian food because the reason of hygiene.

India is lacking of clean water, refrigeration, a clean food preparation area, maintain proper food temperature, and personal hygiene.
I got food poisoning in Mumbai on my last trip and I spent most of my time in the hotel room and I didn't get to see much of the city!
