I'm certainly no expert, but I would imagine when sending such aircraft to foreign airshows you wouldn't want it to be in "full stealth configuration". I'm sure there's plenty of intelligence to be gained. Thus, why not send one of the early prototypes to fly in the airshow? It makes no difference in the scheme of things.

US F22 Raptors are in service for almost 20yrs now. So comparing newer planes like SU57 and J20 now is not so spectacular, but only catching up. By the time SU57 are in full production and J20 in real service deployment, there would be already the 6th generation NGADs.
